【October 8 2014】It wasn't laziness that caused the winemaker to leave those grapes to freeze on the vine--it was strategy. Once the temperature drops below freezing, the water inside the grapes freezes, but the sugars and other dissolved parts of the fruit remain liquid. Pressing the juice while the water is still frozen results in a smaller amount of sweet "ice wine" once it's been fermented. The Okanagan Valley, in British Columbia, has developed an international reputation in recent years for the excellent quality of its ice wine.
