Chef Bill Fu takes the role of head chef at Lai Heen. Bill played a very important role in achieving two-star Michelin Restaurant recognition in his previous role at The Ritz-Carlton, Hong Kong’s Tin Lung Heen, and with this being his first individual venture, every single dish is meticulously prepared. His signature dishes include Char-Grilled Barbecued Ibrico Pork, Baked Abalone Puffs with Roasted Goose, Steam Crab Claw with Egg White in Hua Diao Wine, Double-boiled Chicken Soup with Fish Maw and Sea Coconut in Bamboo to name a few.
