“Grabbing Mutton”

　　In Gansu, “Grabbing Mutton" made in Linxia is especially famous. It has a long history of hundreds of years. In the past it was sold on the streets and  people ate it by grabbing it with their hands. So it is called “shouzhua" (grabbing). While entertaining guests, the host chops the cooked mutton into pieces and puts the pieces on a big plate. While eating, you can grab the mutton and dip it in salt, mashed garlic and parsley. The mutton is soft and tastes delicious.
