Mashi of Hui County

  Mashi, also called Mashzi, is a traditional snack of Han people in Northwest China. Mashi of Hui County is made of flour. Make a soft dough, take a bit every time, and rub it into conch-like piece with thumb. Cook the prepared “conches" in boiling water before fishing them into a bowl and putting saozi and other seasonings. It is tasty, smooth, and easy to digest. It can also be made into fried or braised Mashi.
