Belon, the name of the premium oysters from Brittany, the coastal region of France, is also Banyan Tree’s signature restaurant, located on the hotel's 31st floor. As the name suggests, the restaurant has been designed to evoke an aquatic environment. The menu of the restaurant echoes this theme, offering over 10 types of oysters as its main attractions. In addition, there're a number of innovative dishes from the grill, and some of them cooked in front of the diners for a more interactive culinary experience.
