Kantoke restaurants are a fairly new but popular feature of Chiang Mai, combining great food with cultural entertainment. Kantoke restaurants get their name from the low tables on which the food is served, called Kantoke in Thai. Diners sit on the floor, propped up by sumptuous cushions, and sample a variety of unique northern dishes. Accompanying the traditional food is a performance of traditional Lanna (northern Thai) music and dance.

During the meal you’ll get a chance to sample several typical Northern Thai dishes. First is kaeng hanglay, a slowly simmered pork and ginger curry that is always a favorite with diners. Then there are usually two chili dips served with the meal – one green, and one red. The green dip, naam prikh noom, is made mainly of roasted green chilies and garlic, and is normally quite spicy. The second chili dip, naam prikh ong, is made of ground pork, tomatoes, and red chilies and is not as spicy as the green one. Both of these dips are traditionally eaten using the hands to dip steamed vegetables, fried pork skins, or sticky rice in them. In addition, most khantoke dinners will also include a dish of either fried chicken or pork, so that there is something familiar for travelers who are timid about trying new foods. Finally, there is usually a last course of sliced tropical fruit to round out the dinner.

The music and dance show takes place in two parts. The first part is a display of various traditional Thai dances such as the Fingernail Dance which is performed as guests sit and enjoy their meal. The final dance of the first half is the Circle Dance in which some of the dancers will invite members of the audience to take part and this often causes some amusement. The second half of the show takes place in another auditorium where various hilltribe dances and customs are showcased. The participants here are all genuine hilltribe people and they come from various groups such as the Lahu, Akha and Hmong.
