The time to buy is now. Fares change every day, depending on how many seats are unsold. I can recommend Iceland Air, stopover in Iceland. The fly direct from Sea Tac to Reykjavik, connect from there all over Europe.

There are websites, multiple of them, in fact, devoted to exactly this kind of query. I'm sure you've seen their commercials. One used William Shatner and that blonde with lovely legs from The Big Bang Theory, another uses a garden gnome.
