If there's anything you have time for whilst in Hong Kong, go to Sky 100. You will not be disappointed. From the observation deck you will be able to see a lot of the Hong Kong area, both the city centre, the harbor area, the suburbs and also towards Hong Kong Island. Make sure to come here just before sunset and spend a couple of hours. You'll then be able to enjoy the daytime view, experience an amazing sunset and then finish off with spectacular nighttime views.
