Introduction: Huat kueh is a traditional snack of the Han nationality in Guangdong as well as a type of New Year cake, because “huat (fa)” means both fermentation and fortune in Chinese language. Huat kueh is a kind of fermented rice cake. Huat kueh is often made for Chinese New Year or important worship ceremony on winter solstice. The rice flour is mixed with brown sugar or white sugar and steamed. After huat kueh is cooked, characters of “fu” (happiness) and “shou” (longivity) are stamped on it or auspicious words like “Thank you, God”, “May the family safe” are written down on it. And then the huat kueh will be placed in a pan-shaped container made of bamboo sheet and thin plank.
