Introduction: Beef ball is one of the most famous snacks from Chaozhou–Shantou area of Guangdong with a history of nearly 100 years. There are two kinds of beef ball, one made from beef meat only and the other made from both meat and tendon. The meat ball tastes tender and delicate while beef ball with tendon is more elastic. Cook the beef balls in broth until the broth is just boiled (the broth can’t be boiled for too long, or the beef ball will be sticky). People often eat beef balls with some glutamate, sesame oil, ground pepper, sliced celery and chili paste. But it is believed that local produced shacha sauce is the best condiment for beef balls.
