Elastic beef ball![]() Categories: Cantonese Cuisine City: Meizhou Introduction: Elastic beef ball is a traditional Hakka dish. The beef is mashed into paste and then steamed in a shape of ball. This dish can be traced back to some classic records written in the Northern and Southern Dynasties and the Tang Dynasty, and it was called “dao zhen” (smashed delicacy) back then which could be made from beef, goat and pork. But people along Dongjiang River of Guangdong only use beef to make meatballs with the finest mashing process, making the beef ball taste very savory. Many Hakka people live on selling beef balls at their street stalls, and this dish is regarded as a snack instead of a course for formal banquet. |
