Introduction: Pineapple jelly is a delicious dessert of the Han nationality and belongs to the Cantonese cuisine. The main ingredients are pineapple juice and agar agar. Agar agar is soaked in warm water for two hours and cooked in soft fire. Then, the pineapple juice and sugar are put in melted agar agar, and then some pineapple dices are added into the mixture. The mixture in some small bowls is then kept in fridge. Pineapple is a source of important vitamins and minerals such as thiamin, riboflavin, vitamin B-6, folate, pantothenic acid, magnesium, manganese and potassium and antioxidants and polyphenols, such as beta-carotene.
