Finger-shape pork rib

Introduction: Finger-shape pork rib is a classic food from Guangdong. The name comes from its shape of finger and the ribs taste savory and tender. The dish requires a complicated preparation process. First, the meat is removed from the ribs and cut the each bone into a 5 cm stick. One portion of the dish shall contain 20 sticks. The meat from the ribs, lean and fat pork, shrimp, water chestnut, ginger, red pepper are mixed together and smashed. The mixture is savored with seasonings and the ribs are re-decorateed with the mixture. First, the ribs with mixture are dipped in flour, and then in liquor duck egg, and deep-fred. After the presentation (see the picture) is ready, the food is served with sweet sauce.
