Introduction: Perch platter is a classic dish of the Han nationality in Guangdong and belongs to the Cantonese cuisine. The perch is described as a mailed kylin, so it is also called kylin perch. Main ingredients including perch, ham, mushrooms, larding are all sliced and every two perch slices are separated by each piece of ham, mushroom and pork. The ingredients in order are then steamed.
