Introduction: The Teochew style lobster salad features its delicate and colorful presentation. The main ingredients include lobster, tomato, lettuce, eggs and ham. The yolk of boiled eggs are used to make salad sauce with sesame sauce, peanut oil, wine vinegar, mustard, salt, sugar, ketchup. The lobster meat is separated from head and tail after blanching for 10 minutes. The dish requires a beautiful arrangement of all the ingredients on the plate which looks as if it is still an intact lobster, so from the bottom to the top, there are lettuce, tomato sliced, lobster in sections, egg white slices and ham slices which are covered with salad sauce.
