Introduction: Cold duck is a kind of Hakka delicacy in summer. From May to July, duck is in season and you can enjoy this food anywhere in Hakka area. The ingredients include young duck, ginger, garlic, vinegar, white sugar and glutinous rice wine. The duck is first cooked in water over low fire and then cooled down. It is cut into small fillets and people dip it in sauce with basil, garlic and vinegar before eating it. The taste is quite special and exotic.
