Introduction: Fish noodle is famous snack from Zhangtang town, Dongguan city, Guangdong. The fish paste is pressed as thin as possible and then cut into long and thin strips like noodles. It is just cooked in boiling water for one or two minutes. The fish noodles is often served along with shredded Chinese mushrooms, hotbed chives and shredded green onions and in broth made from fish, chicken and pork bones.
